Coconut Flan

Ingredients

Makes 4

  • 1½ cups evaporated milk
  • 1 cup coconut milk
  • 4 eggs
  • Cinnamon
  • Nutmeg
  • Vanilla
  • Lemon zest
  • ¾ cup caramel

Instructions

  1. Combine eggs and evaporated milk. Add cinnamon, nutmeg, and vanilla to taste. Add coconut milk and lemon zest.
  2. Divide caramel among 4 ramekins. Add mixture. Cook at 300oF.
