Creole Pineapple Chicken

Ingredients

Serves 6

  • 2½ pounds skinless chicken, cut into big pieces
  • 1 pineapple, diced
  • 1 onion
  • 2 garlic cloves
  • 1 tablespoon soy sauce
  • 1 tablespoon butter
  • 1 tablespoon five-spice powder
  • Pinch Cayenne pepper
  • Oil
  • Salt

Instructions

  1. Sauté chicken in butter and oil. Once browned, add soy sauce, five-spice, garlic, and onion. Season to taste with salt and pepper.
  2. Simmer over low heat, 10 minutes.
  3. Add pineapple and cook, 1 hour 15 minutes. Serve hot!
