Pig Stew

An easy and inexpensive recipe.

Active time: 20 minutes
Cooking time: 1 hour
Serves 4

Ingredients

  • 1½ pounds pork loin, cut into cubes
  • Oil
  • Pepper
  • 2 cloves of garlic, pressed
  • Juice of 2 limes
  • Salt
  • 2 yellow onions, sliced
  • 4 whole allspice berries, crushed
  • 1 bouquet garni
  • 2 bay leaves
  • 1 chilli

Preparation

  1. Brown meat on all sides in oil over high heat. Add pepper followed by one garlic clove and the allspice.
  2. Add salt and juice of one lime to browned meat.
  3. Add onions and sauté until brown, then cover with water.
  4. Add bouquet garni, bay leaves, and chilli.
  5. Cover and reduce over low heat about 45 minutes.
  6. Near the end of cooking time, stir in juice of one lime and one crushed garlic clove.

Accompaniment: Rice and pigeon peas.

Tip: You could marinate the meat for a few hours before preparing this dish.
