An easy and inexpensive recipe.

Serves 4
Ingredients
- 1½ pounds pork loin, cut into cubes
- Oil
- Pepper
- 2 cloves of garlic, pressed
- Juice of 2 limes
- Salt
- 2 yellow onions, sliced
- 4 whole allspice berries, crushed
- 1 bouquet garni
- 2 bay leaves
- 1 chilli
Preparation
- Brown meat on all sides in oil over high heat. Add pepper followed by one garlic clove and the allspice.
- Add salt and juice of one lime to browned meat.
- Add onions and sauté until brown, then cover with water.
- Add bouquet garni, bay leaves, and chilli.
- Cover and reduce over low heat about 45 minutes.
- Near the end of cooking time, stir in juice of one lime and one crushed garlic clove.
Accompaniment: Rice and pigeon peas.
Tip: You could marinate the meat for a few hours before preparing this dish.
