- 1 pineapple, peeled, cut into small cubes
- 1/3 cup pineapple juice
- 1 tablespoon coconut flakes
- 1 tablespoon cane sugar
- 1 cup cream
- 4 egg yolks
- ¾ cup caster sugar
- Vanilla extract
Instructions
- Combine pineapple and pineapple juice in a saucepan, add coconut and cane sugar and reduce. Set aside.
- Whip cream.
- Use caster sugar to make a syrup.
- Beat egg yolks with a mixer, adding syrup in a steady stream.
- In a bowl, combine pineapple and whipped cream. Fold in egg/syrup mixture and vanilla extract.
- Divide among 10 small ramekins and chill in freezer, 3 hours.
