Pineapple Fritters

A sweet treat after a delicious Guadeloupe meal!

Marinating time: 1 hour
Cooking time: 10 minutes

Serves 4

Ingredients

  • 1 small pineapple (not too ripe), peeled, cored, and sliced into 8 rings
  • Aged rum
  • Cane syrup
  • Oil
  • 1 cup flour
  • 3 cups milk
  • 1¼ cup sugar
  • Pinch of salt
  • Lime zest
  • 1 egg

Preparation

  1. Marinate pineapple rings in the rum and cane syrup, turning often.
  2. Strain pineapple rings after about an hour.
  3. Make fritter dough (see below).
  4. Dip pineapple rings in batter and drop in a fryer filled with very hot oil.
  5. Strain oil from rings when they are golden brown on both sides; dust with cane sugar and serve.

Fritter batter

  1. Pour flour into a shallow bowl and add milk.
  2. Incorporate sugar and salt.
  3. Stir well to eliminate lumps; the batter should be liquid and smooth.
  4. Add lime zest.
  5. Add egg.
  6. Stir well and let sit.
