
A sweet treat after a delicious Guadeloupe meal!

Ingredients
- 1 small pineapple (not too ripe), peeled, cored, and sliced into 8 rings
- Aged rum
- Cane syrup
- Oil
- 1 cup flour
- 3 cups milk
- 1¼ cup sugar
- Pinch of salt
- Lime zest
- 1 egg
Preparation
- Marinate pineapple rings in the rum and cane syrup, turning often.
- Strain pineapple rings after about an hour.
- Make fritter dough (see below).
- Dip pineapple rings in batter and drop in a fryer filled with very hot oil.
- Strain oil from rings when they are golden brown on both sides; dust with cane sugar and serve.
Fritter batter
- Pour flour into a shallow bowl and add milk.
- Incorporate sugar and salt.
- Stir well to eliminate lumps; the batter should be liquid and smooth.
- Add lime zest.
- Add egg.
- Stir well and let sit.
